You must first enable the staff tip option in order to add it:
Go to Setup.
Click on "Other Settings" Under Point of sale, And Enable the tip option.
You may include the tip in the "quick sale" while creating the bill if you've enabled it.
Go to "Quick Sale"
Click on Add tip as indicated below, while the bill is being generated.
